Crustless Broccoli Quiche

Serving Size: 6 Servings
Time to Make: 75 minutes

Ingredients:

1 teaspoon olive oil
½ small onion, finely chopped
4 large eggs
1 cup 2% milk
1 cup extra-sharp cheddar cheese, grated
½ cup water
¼ teaspoon dried thyme
¼ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ teaspoon chopped dried rosemary
1 medium bunch broccoli

How to Prepare:

  1. Heat oven to 375°F.

  2. Brush a 9 inch pie plate with olive oil.

  3. Cut broccoli into florets, peel stems and cut 1/3 inch thick

  4. Heat oil in a small skillet over medium-high heat.

  5. Add onion and cook until softened, about 3 minutes.

  6. Transfer to a medium bowl; let cool.

  7. Add eggs to onion and lightly beat.

  8. Whisk in milk, ½ cup of the cheese, water, thyme, oregano, salt, pepper and rosemary to blend.

  9. Cover bottom of pie plate with broccoli.

  10. Pour cream mixture into pie plate.

  11. Sprinkle with remaining ½ cup cheese.

  12. Bake until quiche is golden brown, 50 to 60 minutes.
