Quick-n-Easy Nut Bread

Serving Size: 1 loaf
Time to Make: 90 Minutes

Ingredients:

1/3 cup granulated sugar
1/3 cup sugar substitute
1/3 cup canola oil
1 large egg, lightly beaten
1½ cups fat-free (skim) milk
1½ cups all-purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon baking soda
1 cup walnuts, finely chopped

How to Prepare:

  1. Preheat oven to 350° F.

  2. Spray 9' by 5' metal loaf pan with nonstick cooking spray.

  3. In medium bowl, stir together granulated sugar, sugar substitute, oil, and egg.

  4. Stir in milk until blended.

  5. Add all-purpose flour, whole wheat flour, baking powder, salt, and baking soda, and stir just until combined.

  6. Fold in walnuts.

  7. Spoon batter into prepared pan.

  8. Bake 1 hour or until toothpick inserted in center comes out clean.

  9. Cool loaf in pan on wire rack 15 minutes; remove loaf from pan and cool completely on rack.

  10. For easier slicing, refrigerate loaf before serving.
